According to a Clark County permit , Ayni Peruvian Restaurant is set to open in the Paradise neighborhood inside the urban lifestyle shopping center known as The Collective at 3900 Paradise Rd, Ste N . Formerly known around the area as Citibank Park, The Collective features popular local dining spots like Cleaver Steakhouse, Tacos & Beer, and Marrakech Mediterranean Restaurant. At the helm of the opening is owner Gonealo Quispe . What Now Las Vegas reached out to Quispe to find out more about the upcoming opening. Unfortunately, we did not hear back by the time of this publication. “Every corner of Ayni honors the Andean roots with a contemporary interpretation: color, geometry, and symbols that accompany the table without shouting for attention,” the Ayni Peruvian Restaurant website reads. “Every ingredient that reaches our table comes from a seed that trusted the sun. Every dish we serve is a response to that trust. We don’t cook to impress. We cook to give back.” The restaurant is named after “Ayni,” an ancient Andean concept of reciprocity, mutual aid, and cooperation rooted in indigenous Quechua culture, today often associated with community sharing and balanced exchange. The interior and branding honor Andean roots through a contemporary lens, incorporating traditional colors, geometric patterns, and symbolic artwork paired with a stone-accented cocktail bar .
